Ingredients
- 12 oz / 340 g fettuccine
- 14 oz / 400 g mushrooms, sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- ½ cup grated Parmesan
- ½ cup pasta water
- ½ teaspoon dried thyme
- Salt
- Freshly ground black pepper
- 2 tablespoons chopped parsley
Instructions
1. Prepare the pasta
Cook fettuccine in salted water until al dente.
Reserve ½ cup of pasta water and drain.
2. Brown the mushrooms
Heat olive oil and one tablespoon butter in a wide skillet.
Add mushrooms in a relatively even layer.
Allow them to cook without constant stirring so they can develop golden edges.
Cook for approximately 6–8 minutes.
3. Add garlic
Reduce the heat slightly.
Add remaining butter, garlic and thyme. Cook for approximately 30 seconds.
4. Make the sauce
Pour in the cream and bring it to a gentle simmer.
Cook for 2–3 minutes before adding Parmesan.
Stir over low heat until smooth.
5. Combine with fettuccine
Add pasta and toss thoroughly.
Add reserved pasta water gradually until the sauce reaches a silky consistency.
6. Serve
Season with salt and plenty of freshly ground black pepper.
Top with parsley and extra Parmesan.
Best Mushrooms to Use
Cremini mushrooms provide a deeper flavor than standard white mushrooms, but either works well.
For an upgraded version, use a mixture of cremini, shiitake and oyster mushrooms.
Optional Additions
Spinach, caramelized onions, chicken, pancetta, peas or truffle oil can all turn this basic recipe into something different.
